We have recently introduced to the Candy Buffet Studio, a Candy Floss Cart.

Candy Floss is possibly the most nostalgic and most loved of all the candy, it brings back so many memories of going to the fare, seeing all those bags hanging up, swaying in the breeze, but the smell is one which most of us will not forget, the sweet sugar smell.

Not many people know the history of how it all began, although there are varying stories of where it originates, some say Italy & other the States.

But it was over 100 years ago, when the invention came about, from a delicatessen, sugar was melted in to pan and draped over a bowl to make sugar nests for desserts, although this method is still used today by many Chefs looking to create special desserts.  This method was not ideal for the mass market, hence the invention of the candy floss machine.

Based on the `centrifugal force` method, pure sugar is dropped into the centre and within seconds, it is melted down and spun out into the drum, so even with the smallest of amounts of sugar, it is the spinning amongst the air that gives it the special appearance of fluffed up candy.

Over the years, the name has changed, the first name was Fairy Candy with its pink colour, this soon evolved to cotton candy and then, as we know it today, candy floss... some Americans still call it cotton candy.

It is also quite recent that candy floss comes in other colours and flavours, from green to blue, orange to yellow... but of course pink will always be the favourite!
